Potato Pancakes
4 large potatoes, grated (800 grams)
1 large onion, chopped finely
2 eggs
1 cup plain flour
1 teaspoon baking powder
Up to 1/2 cup milk
Salt and pepper
Whisk together all of the above ingredients.
Heat some butter in a frying pan and drop spoonfuls of mixture onto the hot pan. Cook the pancakes until they are golden brown on each side.
Serve with sour cream, or some sort of sauce, a bit of butter, or just plain.

Talking about recipes from your country, someone recently mention rewena paraoa - its a Maori fermented potato bread recipe. I haven't tried this yet
ReplyDeleteHi, thanks for your comment! I haven't tried Maori bread yet either, in fact I've never made bread that uses a starter instead of yeast, but I'd really like to try it! I'll add it to my to-do list (which is already pretty large!)
ReplyDeletelooks good sister! I made potato pancakes not too long ago on my sister blog, Taste Buds. I served them with English bangers and peas (i know, my partner is British) and it was surprisingly enjoyable. Love it!
