Tomato sauce with white wine

Tomato Sauce

2 tablespoons olive oil
1 finely chopped onion
2 cloves of garlic, crushed or chopped finely
1 medium carrot, diced up really small
1/2 red capsicum/bell pepper, diced
2 tablespoons tomato paste
400 gram can tomatoes
2 teaspoons sugar
1 cup dry white wine
Salt and pepper to season

Heat the oil in a large saucepan. Add the onion and garlic and stir for awhile, until they are soft.

Add the carrot and capsicum and keep on stirring for a few minutes.

Stir in the tomato paste, tomatoes, wine and sugar. Reduce the heat and simmer for 10 or 20 minutes, just until the sauce is nice and thick.

Season with salt and pepper as needed.
